Ingredients:
1 prepared Herbed Pizza Crust
Sauce
¼ cup + 2 Tablespoons tomato paste*
¼ cup + 2 Tablespoons water
1 teaspoon oregano
1 teaspoon basil
1/4 teaspoon garlic powder
M’lis Sweet or Stevia to taste
Italian Sausages
16 ounces raw, ground turkey, 93% lean OR 16 ounces lean ground bison
1 ½ teaspoon dried parsley
1 teaspoon dried oregano
½ clove garlic, minced
1 teaspoon dried ground basil
1 teaspoon fennel seed
2 eggs, whisked
½ cup old fashioned rolled oats
Toppings
½ small red onion, thinly sliced
2 cups mixed bell peppers, thinly sliced
1 cup almond cheese (optional)
Directions:
Preheat oven to 350F degrees.
Mix tomato paste, water, oregano, basil, garlic powder, and M’lis sweet until blended well. Set aside.
Mix seasoning, egg, and oats into ground turkey OR bison. Form seasoned meat into one-inch balls. In a medium pan, heat olive oil over medium-high heat and sear sausages until outside is nicely browned and sausage is cooked through. In the same skillet wiped clean of excess oil, spray with nonstick cooking spray and sauté onion and peppers for 2 to 3 minutes
Spread sauce over prepared crust, top with cooked sausage**, vegetables, and almond cheese if using.
Return to the oven and bake for 5-10 minutes or long enough for toppings to heat up.
*Freeze any remaining tomato paste in an ice cube tray in Tablespoon proportions. When frozen, pop the tomato cubes out of the tray and store in a freezer safe container for later use.
Makes 4 servings
**You will only need about half of the meatballs for this recipe, reserve the remaining half in a ziploc baggie in the freezer for another meal.
