Ingredients:
4 eggs
8 Tablespoons prepared hummus
Fresh Dill weed, minced (You may also use sliced green onions, or other fresh herbs finely minced)
Directions:
Place the four eggs in a small saucepan. Fill pan with water just to cover eggs. Place over high heat and set a timer for 16 minutes. Once boiling, turn the heat to medium heat to cook the remainder of the 16 minutes. (Total cooking time 16 minutes)
Remove from heat and place eggs in cold water. Let eggs cool completely and peel eggs.
Cut eggs in half, lengthwise and discard the yolks. Spoon the hummus into the egg white halves and top with fresh dill.
Makes 2 servings
* When hard boiling eggs, the older the egg the better for peeling.
