Raspberry Vinaigrette

Ingredients: 3 Tablespoons light olive oil 2 Tablespoons raspberry vinegar 1 ½ Tablespoons orange juice Honey or Agave to taste 1/8 teaspoon salt Freshly ground pepper to taste Directions: Add oil, vinegar, orange juice, sweetener, salt and pepper to a jar with a tight-fitting lid; shake well to combine. Makes 4 servings

Sweet & Sour Salad

Ingredients: 8 cups mixed greens 1 Granny smith apple, diced ¼ cup dried cranberries 1/3 cup chopped pecans Directions: Plate 2 cups of mixed greens on each salad. Top with diced apple, cranberries and pecans. Drizzle with Raspberry Vinaigrette dressing and serve. Makes 4 servings
