Thai Coconut-Pineapple Rice

Ingredients:

1 cup light coconut milk

1 cup water

2 teaspoon ginger root, fresh, minced

½ teaspoon table salt

1 cup brown basmati rice

1 cup pineapple, fresh, diced

½ cup scallion, chopped

1 teaspoon mint leaves, fresh, chopped (optional)

2 Tablespoon chopped almonds, toasted

1 medium lime, cut into 4 wedges

Directions:

In a medium saucepan, combine coconut milk, water, ginger and ½ teaspoon of salt; bring to a boil over medium-high heat. Stir in rice; reduce heat, cover and simmer until rice is tender and most of liquid is absorbed, about 20 minutes.

Remove from heat; add pineapple, scallions and mint (optional) do not stir. Cover and let stand for 5 minutes. Sprinkle with almonds; fluff rice with a fork. Serve with lime wedges to squeeze over rice.
