Warm Balsamic Spinach Salad

Ingredients:

8 cups fresh spinach, tightly packed

2 Tablespoons olive oil

2 small Portobello mushrooms, sliced

2 teaspoons rosemary, chopped

½ teaspoon salt

½ teaspoon black pepper

6 Tablespoons balsamic vinegar

Directions:

Divide spinach evenly between 4 salad plates.

Heat oil in a large nonstick skillet over medium-high heat. Add mushrooms, and cook 6 minutes or until tender, stirring often. Add rosemary, salt and pepper. Stir in balsamic vinegar; cook 1 minute. Spoon warm mushroom mixture evenly over spinach.

Makes 4 servings
