Ingredients:
20 ounces ground turkey
4 Roma tomatoes, chopped
1 small onion, diced
1 -14 ounce can of coconut milk
2 clove garlic, minced
2 Tablespoons coconut oil or olive oil
1 chile pepper (seeds removed), diced
½ teaspoon cayenne pepper
½ teaspoon turmeric powder
½ teaspoon curry powder
Salt to taste
Directions:
Chop up the onions, garlic and chile pepper – you can use your food processor to save time. Add them to a frying pan with the turkey and a tablespoon of coconut oil for 5 minutes. Then add all the other ingredients, and simply leave it to simmer for 30 minutes on a low heat.
Makes 4 servings
