Ingredients:
1 1/2 cup of fresh blackberries
3/4 cup almond flour
1/2 an egg
1 Tablespoon coconut oil (or safflower seed oil)
A drizzle of pure maple syrup
Coconut milk
Directions:
Preheat oven to 350 degrees F. Pour the blackberries into a pie pan.
In a small bowl mix together the egg, almond flour, coconut oil, and shake in a bunch of cinnamon. Stir well. The mixture will be really thick and clumpy.
If you wish, drizzle the pure maple syrup over the blackberries.
Crumble the dry almond flour mixture over the blackberries and bake in oven for 35 minutes.
Serve in bowls with cold coconut milk poured over the top.
Makes about 3-4 servings
