Jicama, Avocado & Cucumber Salad

Ingredients:

1 small Jicama root, peeled & diced

½ English cucumber, peeled, seeded and diced

1 avocado, cubed

2 Tablespoons pure maple syrup

2 Tablespoons lemon juice

Pinch of dried ground mustard

Sea salt to taste

3 Tablespoons extra-virgin olive oil

½ teaspoon poppy seeds

Directions:

In a serving bowl, combine jicama, cucumber and avocado.

In a small bowl or a jar with a tight fitting lid, combine dressing ingredients.

Whisk or shake to combine. Pour dressing over salad and gently stir.

Makes 2 servings
