Toasted Coconut

Preheat oven to 350ºF. Spread unsweetened coconut shavings, shredded or flaked coconut on a rimmed baking sheet and bake, stirring once or twice, until golden, about 5 to 10 minutes.

  Ingredients: 4 ounces brown rice spaghetti noodles ¾ cup prepared Pesto Sauce ¼ cup unsweetened almond milk 1-2 Tablespoons lemon zest Directions: Cook brown rice noodles according to package directions. Meanwhile combine pesto sauce, almond milk and lemon zest according to taste. Drain noodles and toss with pesto sauce. Makes 2 servings
