Rosemary Lemon Chicken

Ingredients:

½ pound skinless, boneless chicken breast
1 Tablespoons olive oil
2 Tablespoons lemon juice
1 clove garlic, pressed
2 Tablespoons fresh rosemary, minced
¼ teaspoon sea salt

Directions:

In a medium bowl, combine olive oil, lemon juice, garlic, rosemary and salt.

Rinse chicken breasts, pat dry and place between two pieces of saran wrap and pound with a meat mallet or heavy sauté pan until chicken is of an even thickness. Place in a 7×11 inch baking dish.

Pour marinade over chicken, cover and refrigerate for at least 30 minutes or up to 6 hours.

Heat grill and cook chicken for 5-7 minutes per side until browned and cooked in the center.
