Ingredients:
½ Tablespoon olive oil
½ cup finely chopped green bell pepper
¼ cup finely chopped yellow bell pepper
½ cup diced tomatoes
2 cups homemade chicken, fish, or vegetable broth
8 ounces boneless, skinless fish fillets (salmon, tilapia, halibut, or shrimp), cut into ¾” pieces
1 Tablespoon tahini
½ Tablespoon grated lemon peel
3 Tablespoons finely chopped cilantro, without stems
Directions:
In a 3-quart saucepan, heat the oil over medium heat. Add the onion and bell peppers and cook for about 5 minutes, until soft but not browned. Add the tomatoes and cook for 3 minutes longer.
Carefully pour in the broth and bring the mixture to a boil. Add the fish. When the mixture returns to a boil, reduce the heat to low. Simmer for about 3 minutes, until the fish is cooked through.
Stir in the tahini, lemon peel, and cilantro. Serve immediately.
