Ingredients:
2 (6 ounce) fillets halibut
1/2 lime, cut into wedges
Sea salt & Pepper to taste
1-2 cloves garlic, coarsely chopped
1/4 cup chopped fresh cilantro
1/2 Tablespoon fresh lime juice
1 Tablespoon butter
1/2 Tablespoon olive oil
Directions:
Marinate the fish in garlic, olive oil and lime juice for 6-7 hours.
Heat a pan over medium to medium-high heat or grill. Remove fish from marinade and season with salt, pepper, and squeeze lime wedges over fish fillets and place in preheated pan. Reserve the marinade. Sear the fish on each side. Remove pan from the heat and add a lid to finish cooking. Transfer the fish to a plate.
Add marinade to the pan and cook for a few minutes at a low boil adding more lime juice to taste. Stir in the butter until melted, then add cilantro and serve over fish.
