Grilled Summer Fruit with Yogurt Dip

Ingredients:

2 Tablespoons honey, agave, or pure maple syrup

1 small banana, cut diagonally into 1/2 – inch pieces

1 medium plum, cut in half and pitted

2 pineapple rings

1 medium apricot, cut in half and pitted

Dash of cinnamon

½ cup plain Greek-style yogurt

Pure vanilla extract to taste

Directions:

Preheat grill. Brush syrup on fruit.

Place fruit on a clean, medium-hot grill. Grill, basting with syrup occasionally, until slightly soft with markings from the grill, about 3 to 5 minutes. Turn fruit and grill other side until quite soft, about 1 minute more. (Note: Grill time depends on ripeness of fruit. Keep your eye on it and remove each piece as it is done.)

With a fork, whisk together yogurt with 1/8 teaspoon of vanilla extract in a small bowl. Add more extract if desired.

Remove fruit from grill and sprinkle with cinnamon; serve with a small bowl of yogurt for dip.
