Ingredients:
For tahini dressing
2 Tablespoons well-stirred tahini (Middle Eastern sesame paste)
2 Tablespoons water
1 Tablespoon fresh lemon juice
1 Tablespoon coconut aminos
½ Tablespoon honey
½ small garlic clove, minced
¼ teaspoon salt
Dash of cayenne (optional)
For salad
1/2 head Romaine lettuce, torn into bite-size pieces (3 cups)
½ cup radishes (about 4 small), trimmed, halved, and thinly sliced
¼ seedless cucumber (usually plastic-wrapped), halved lengthwise and thinly sliced crosswise
2 scallions, thinly sliced
Directions:
Blend all dressing ingredients in a blender until smooth. (If desired, blend in more water, ½ teaspoon at a time, to thin dressing.)
Make salad:
Toss together all salad ingredients in a large bowl with just enough dressing to coat.
Makes 2 servings
