Tomato Basil Soup

Ingredients:

¼ large white onion, chopped into 1/2″ chunks

½ Tablespoon Olive Oil

½ pounds tomatoes

1 cup finely chopped carrots

1 cup vegetable stock

½ Tablespoon fresh basil

¾ teaspoon fresh thyme

½ Tablespoon Coconut Milk

Sea salt to taste

Directions:

In bottom of large pot, drop oil and chopped onion. Place on medium heat for 10 minutes and stir until onions are golden.

Cut whole tomatoes into 4 (do not peel off the skin!)

Add vegetable stock to pot with onions and turn heat up until boiling.

Once boiling: add carrots, tomatoes, basil, thyme, and sea salt. Cover pot and place on med/low heat for 30 minutes.

Pour contents of pot into blender and puree until completely smooth. Place back into pot and add coconut milk. Sprinkle with fresh thyme and keep on med/low heat until served.

Makes 2 servings
