Ingredients:

½ cup cooked quinoa, cooled

½ cup mandarin oranges (2 small mandarins or clementines or 1 small can oranges in their own juice; drained)

1 Tablespoon freshly squeezed orange juice

¼ cup plain Greek-style yogurt

Directions:

Blend yogurt and orange juice.

Top quinoa with mandarin oranges. Toss with yogurt sauce.

Makes 1 serving
