Ingredients:
½ cup dried whole peas
2 ¼ cups water or homemade chicken stock
1 stalks celery
½ large onion
¾ teaspoon fresh chopped sage
½ teaspoon fresh chopped thyme
Sea salt to taste
1 Tablespoon fresh parsley
Directions:
Soak the peas overnight in plenty of water.
Drain and rinse the peas. Cover with the stock or water, bring to a boil and simmer gently, covered with a lid, until soft and mushy. This will take approximately 1 to 1 ½ hours but only 10 minutes if using a pressure cooker. If not using a pressure cooker, you may need to add a little more water if the stock is evaporating.
Finely chop the celery and onion and add to the soup along with the sage, thyme, and salt.
Bring to a boil and cook the soup for a further 15 minutes. Blend if a smoother soup is desired. Sprinkle with parsley just before serving.
Makes 2 servings
