White Chicken Chili

Ingredients:

¼ teaspoon salt

¼ teaspoon garlic clove, minced

1 large ripe tomato, seeded and finely chopped

½ small onion, finely chopped

2 Tablespoons finely chopped fresh cilantro

1 teaspoon jalapeno pepper seeded and finely chopped (wear gloves to prevent irritation)

1 teaspoon fresh lime juice

8 ounces boneless, skinless chicken or turkey breast

2 cups cooked great northern beans

1 cup homemade chicken broth

Directions:

On a cutting board, sprinkle the salt over the garlic. Mash to a paste with the flat side of a knife.

In a small bowl, combine the mashed garlic, the tomatoes, onion, cilantro, jalapeno, and lime juice. Let stand at least ½ hour before serving to allow the flavors to blend.

Cook and shred the chicken or turkey breast; set aside. In a large saucepan, mix together the beans, broth, and salsa. Heat through and add extra broth, if desired. Stir in the meat and garnish with extra cilantro, if desired. Serve hot.
