Ingredients:
8 cups baby lettuce mix
1 cup Cilantro Lime Rice
1 cup cooked black beans
1 red bell pepper
2 cups cooked chicken breast, cubed or shredded
Avocado Aioli: (Makes 8 servings)
1 medium very ripe avocado
1/3 cup plain Greek-style yogurt
1 Tablespoon chopped cilantro
2 teaspoon minced garlic
1 teaspoon fresh lemon juice
½ teaspoon Sea salt
1 medium tomato, diced
¼ cup diced red onion
Directions:
Preheat the broiler. Place foil on a baking sheet and place the pepper on it. Broil 5 inches from the heat, turning frequently with tongs, until the skin blisters, about 15 minutes. Set aside to cool.
Combine the avocado, yogurt, cilantro, garlic, lemon juice, salt, and black pepper in a food processor and process until just smooth. Stir in tomato and red onion.
When pepper is cool enough to handle, peel the skin off, discard the seeds, and dice.
Place the lettuce mix on a plate. Then, in a clockwise fashion, top the lettuce with the Cilantro Lime Rice, beans, and bell peppers. Sprinkle the chicken on top. Place a spoonful of Avocado Aioli on top and garnish with the cilantro.
Makes 2 serving
