Thyme-Roasted Sweet Potatoes

Ingredients:

1 medium sweet potato

¾ Tablespoon olive oil

1 large garlic clove, minced

1 ½ Tablespoon fresh thyme leaves

Directions:

Preheat oven to 450F.

Peel sweet potato and cut into 1 ½-inch thick rounds and then into half-moons. Combine all ingredients in a mixing bowl and toss. Arrange potato slices in a single layer on heavyweight rimmed baking sheet. Place on top rack of oven and roast until tender and slightly browned, about 40 minutes. Serve warm or at room temperature, garnish with thyme sprigs if desired.
