1 potato, peeled and cut into 1-inch pieces

1 teaspoon olive oil

1 teaspoon various fresh herbs, minced

1 very small garlic clove, minced

Directions:

Preheat oven to 475F.

In a bowl combine cubed potato, oil, and herbs. Toss to coat.

Place potatoes in a single-layer on a baking sheet and bake for 20 to 30 minutes or until tender and browned; toss frequently to brown on all sides.

Makes 1 serving
