Ingredients:

1 small bunch Kale finely chopped
1 cup carrots shredded
1 cup of grape tomatoes
¼ cup soaked pine nuts
½ red onion cut into thin rings
Juice of ½ lemon
2 Tablespoons olive oil
Crushed garlic to taste
Sea salt to taste

Directions:

Mix all ingredients…set in fridge overnight.

Makes 2 servings
