Easy Mexican Beans

Ingredients:

1 Tablespoon olive oil

½ medium onion, diced

2 cloves garlic, minced

1 jalapeno pepper, minced

1 (15 ounce) can pinto beans, drained and rinsed; or use dried beans, soaked, and cooked.

2/3 cup chicken broth

Sea salt to taste

2 Tablespoon chopped fresh cilantro leaves

Directions:

Heat oil in a large skillet over medium heat. Add the onion and cook until tender, about 3 minutes. Stir in the garlic and jalapeno; cook for 1 minute more. Stir in the beans and chicken broth and cook until the beans are warmed through, about 5-10 minutes. Season with sea salt.  You can mash the beans, or leave them whole.

Makes 2-3 servings
