Ingredients:
6 tablespoons of virgin olive oil
2 cloves of minced garlic
1 teaspoon Sea salt
1 Tablespoon fresh, chopped basil
1 tablespoon of fresh, chopped parsley
2 tablespoons lemon juice
2 6-ounce salmon fillets
Directions:
In a glass bowl, mix together the olive oil, garlic, salt, basil, parsley and lemon juice.
Place the two salmon fillets into the marinade mixture and turn to coat. Place the salmon in the refrigerator to marinate for about half an hour, turning the fish occasionally.
Preheat the oven to 375 degrees.
Place the fillets in aluminum foil, cover with the marinade, and seal the foil tightly.
Place the foil package into a glass baking dish. Bake for 15 minutes, or until the salmon easily flakes with a fork.
Makes 2 servings
