Chicken, Artichoke and Red Onion Pizza

Ingredients:

1 Prepared Pizza Crust

3 Tablespoons tomato paste*

3 Tablespoons water

1 Tablespoon fresh, minced oregano

1 Tablespoon fresh, minced basil

1 garlic clove, minced

Dash of M’lis Sweet

Sea salt to taste

½ large red onion, sliced

½ cup cubed cooked chicken or turkey

½ can artichoke hearts, drained and sliced

1 ½ Tablespoons drained and sliced roasted red bell peppers (from 7-ounce jar) or roast one red bell pepper and dice

Directions:

Preheat oven to 375F.

Mix tomato paste, water, oregano, basil, garlic, and M’lis sweet until blended well.

Spray skillet with cooking spray and heat over medium heat. Sauté onion 3 to 5 minutes, stirring occasionally, until crisp-tender.

Spread sauce over prepared crust, and then spread onion over entire pizza. Top with chicken, artichoke hearts, and bell peppers.

Place in oven and bake for another 15 minutes to cook toppings.

*Freeze any remaining tomato paste in an ice cube tray in Tablespoon proportions. When frozen, pop the tomato cubes out of the tray and store in a freezer safe container for later use.
