Banana Nut Pancakes

Ingredients:

1 egg

2 Tablespoons pure maple syrup

½ Tablespoon vanilla extract

¼ cup water

¾ cups blanched almond flour

¼ teaspoon Sea salt

¼ teaspoon baking soda

Grape seed oil for sautéing

1 banana, sliced

2 Tablespoons chopped walnuts

Directions:

In a blender , combine eggs, maple syrup, vanilla and water and blend on high until smooth.

Add almond flour, salt and baking soda and blend again to incorporate dry ingredients into batter.

Warm grape seed oil in a large skillet over medium heat.

Pour pancake batter onto skillet.

Pancakes will form little bubbles, when bubbles open, flip pancakes over and cook other side.

Remove from heat to a plate.

Repeat process with remaining batter, adding more oil to skillet as needed.

Top with banana slices and nuts.

Makes 2 servings of pancakes(Freeze remaining for later use)
