Ingredients:
½ onion, sliced
½ squash, sliced in thin rounds
½ zucchini, sliced in thin rounds
½ yellow and 1 red tomato sliced into wedges
½ red pepper, thinly sliced (optional)
2 Tablespoons olive oil
½ teaspoon Sea salt
2 fish fillets (tilapia or salmon)
Directions:
Preheat oven to 400F degrees.
Toss vegetables with oil, sea salt and spread out in roasting pan.
Roast for about 20 minutes.
Place fish atop vegetables and drizzle with about 2 tablespoons of olive oil and some more sea salt.
Cover and bake for 10 minutes or until fish flakes easily (will depend on thickness of fish fillets) and vegetables are tender.
Makes 2 servings
