Arctic Char with Cilantro-Yogurt Sauce

Ingredients:

¼ cup Greek-style plain yogurt

2 Tablespoons finely chopped, peeled cucumber

1 Tablespoon chopped fresh cilantro

¼ teaspoon fresh lime juice

Sea salt to taste

1 teaspoon olive oil

2 (6-ounce) arctic char or salmon fillets, skinned

Sea salt to taste

Lime wedges (optional)

Directions:

Combine first 5 ingredients; chill.

Heat oil in a large nonstick skillet over medium-high heat.

Sprinkle fillets with salt and pepper.

Add fillets to pan; cook 3 minutes on each side or until done. Serve fillets with sauce and lime wedges, if desired.
