Roasted pumpkin

 

Instructions:

Desired amount of pumpkin

Olive oil

Sea salt

Directions:

Preheat oven to 400F

Quarter, peel and seed the pumpkin.

Cut pumpkin into chunky 2” cubes and place into a large and sturdy roasting tray.

Drizzle enough olive oil over pumpkin to lightly coat each piece. Sprinkle with salt to taste.

Bake 30 to 45 minutes or until pumpkin is soft and tinged brown at the edges.
