Ingredients:
4 slices leftover Paleo bread cut into ½ – 1 inch thick slices
2 eggs
½ cup canned coconut milk
1 teaspoon vanilla extract
¼ teaspoon cinnamon
1-2 Tablespoons coconut oil
Directions:
Whisk together the eggs, coconut milk, vanilla, and cinnamon.
Heat a skillet or grilled and add the coconut oil.
Dip the bread in the egg mixture on both sides and place on griddle to cook for 2-3 minutes per side.
Top French toast with fresh fruit, pure maple syrup or honey and a dash of cinnamon if desired.
Makes 4 servings
