Ingredients:
4 thin slices prosciutto
Olive Oil
4 eggs
Ground Basil
Freshly ground black pepper
Directions:
Preheat the oven at 400F.
Lightly coat a 6 cup muffin tin or 4 ramekin cups with olive oil (fill the two remaining cups of the muffin tin half way with water so they will not warp in the oven).
Fit one slice of prosciutto in each cup, making a bowl.
Crack one egg inside each slice of prosciutto and add a little ground pepper and basil on top. Bake in the oven for 12 minutes at 400F.
Remove from the oven and let them set for 5 minutes.
