Broiled Herb-Marinated Shrimp Skewers

¾ cup fresh cilantro

¾ cup fresh parsley

½ cup fresh basil leaves

3 Tablespoons extra-virgin olive oil

3 Tablespoons fresh orange juice

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon freshly ground black pepper

2 garlic cloves

1 ½ lbs. jumbo shrimp, peeled and deveined

Olive oil


Combine first 9 ingredients in a food processor; process until smooth. Place in a bowl; add shrimp, tossing to coat. Marinate in refrigerator for 30 minutes, stirring occasionally.

Preheat broiler to high.

Remove shrimp from marinade; thread 6 shrimp onto each of 4 wooden skewers. Place skewers on a broiler pan coated with olive oil; top with any remaining marinade. Broil 5 inches from heat for 2 minutes on each side or until shrimp are done.
