Ingredients:
¾ pounds medium shrimp, shelled and deveined
1/3 cup fresh orange juice
½ cups fresh lemon juice
½ cup fresh lime juice
½ cup unsweetened pineapple juice
½ mango, peeled and diced
½ cup diced jicama
½ small red onion, minced
½ cup chopped fresh cilantro
½ jalpeno chile, seeded and minced
½ avocado, peeled and diced
½ Tablespoon extra-virgin olive oil
Salt and Pepper
Directions:
Heat large covered saucepot of water to boiling on high. Fill large bowl with ice and water. Add shrimp to boiling water; cook 1 to 2 minutes or until just opaque throughout. Drain; transfer to bowl of ice water. Let stand until cold. Drain well. Cut shrimp into ½-in pieces. Transfer to large bowl; stir in fruit juices. Cover and refrigerate 30 minutes.
Stir in mango, jicama, onion, cilantro, jalapeno, avocado, oil, and salt and freshly ground black pepper to taste. Cover and refrigerate 30 minutes longer. Serve with Homemade Baked Corn Tortilla Chips.
