Ingredients:
1 (15-ounce) can great northern beans, rinsed and drained
3 cups tomato, seeded and chopped
3 Tablespoons celery, chopped
2 Tablespoons scallion, sliced
1 Tablespoon olive oil
1 Tablespoon fresh lemon juice
1 ½ teaspoon fresh sage, chopped
Salt and pepper to taste
Directions:
Combine all ingredients in a bowl; toss gently. Garnish with sage, if desired.
Makes 4 servings
