Ingredients:
1 egg yolk
1 Tablespoon lemon juice
1/2 teaspoon dry mustard (optional)
1 cup light extra virgin olive oil, avocado oil, almond oil or macadamia nut oil (you may use a blend of oils but make sure it is a light colored oil)
Directions:
Combine raw egg yolk and lemon juice in a blender.
Add 1 drop of oil and continue to blend on high for 30 seconds.
Add 2 more drops oil and blend for 30 seconds.
Add 5 more drops oil and blend for 30 seconds.
Continue to slowly incorporate olive oil one Tablespoon at a time. You should be starting to see the consistency of mayonnaise.
*If you have an immersion blender, simply add all ingredients into a 4 cup measuring cup. Place the blade of the blender directly over the egg yolk and blend. Lift the blender wand up and down in the container to make sure you blend all of the oil. This takes only 10-20 seconds!
