Classic Three-Bean Salad

Ingredients:

1 Tablespoon white-wine vinegar

½ Tablespoon red-wine vinegar

½ Tablespoon chopped fresh basil

½ Tablespoon olive oil

1 tomato, chopped

1/2 cucumber, diced

½ cup canned cannellini beans, rinsed and drained

½ cup canned red kidney beans, rinsed and drained

1/3 cup (2-inch lengths) trimmed fresh green beans, steamed

2 scallions, sliced

Salt and pepper to taste

Directions:

Combine the vinegars, basil, and oil in a large bowl. Add the tomatoes, cucumber, red kidney beans, cannellini beans, green beans, scallions, salt, and pepper; toss to coat. Refrigerate, covered, until chilled, about 2 hours.

Makes 2 servings
