Ingredients:
1 bunch kale, coarsely chopped
1 ½ Tablespoon olive oil, extra-virgin
3 Tablespoons minced garlic
1 (15 ounce) can cannellini beans, rinsed and drained
2 Tablespoons fresh lemon juice
Salt and Pepper to taste
Instructions:
Place oil and garlic in a large nonstick sauté pan; set over low heat. Sweat garlic for approximately 10 minutes, stirring frequently, keeping oil and garlic together in center of pan to avoid browning.
Add kale to pan and cook until bright green in color.
Add beans to pan; stir well to combine.
Add lemon juice to pan; toss to combine. Season well with salt and pepper.
Makes 4 servings
