Egged Spinach Salad

Ingredients:

4 cups fresh spinach

¼ cup sliced raw almonds

1 cucumber, peeled and sliced

2 tomatoes, diced

2 hard-boiled eggs, sliced

Dressing:

1/4 cup red wine vinegar

1/4 cup olive oil

2 teaspoons agave nectar

1/2 teaspoon dry mustard

Sea salt and freshly ground black pepper to taste

Directions:

Combine all vegetables into salad bowl.

Combine dressing ingredients in a small jar and shake. Pour onto salad and toss.

Add eggs and serve.

Makes 4 servings
