Ingredients:

¼ cup coconut flour, sifted
¼ teaspoon Sea salt
¼ teaspoon baking soda
3 eggs
2 ½ Tablespoons pure maple syrup
⅓ cup grape seed or coconut oil
1/2 cup blueberries, fresh or frozen

Directions:

In a small bowl, combine coconut flour, salt and baking soda.

In a large bowl, combine eggs, pure maple syrup, and grape seed oil and blend well with a hand blender.

Mix dry ingredients into wet, blending with a hand mixer.

Gently fold in blueberries.

Place batter in paper lined muffin tins.

Bake at 350° for 20-25 minutes.

Cool and serve

Makes 6 muffins (2 muffins per serving) Refrigerate or freeze remaining for a later snack
