Ingredients:
2/3 cup uncooked wild rice blend (blend of brown, black, red, etc)
Chicken broth (amount varies depending upon rice blend)
8 asparagus spears, cut into 1-inch lengths, steamed until tender-crisp
½ red onion, finely chopped
6 Tablespoons finely chopped fresh parsley
4 Tablespoons white-wine vinegar
2 teaspoons olive oil
1 teaspoon Agave nectar
Salt and pepper to taste
Directions:
In a medium saucepan, combine the chicken broth; bring to a boil. Add wild rice blend. Reduce the heat and simmer, covered according to package directions.
In a large bowl, combine the asparagus, onion, parsley, vinegar, oil, agave, salt, and pepper. Add the rice; toss to combine. Refrigerate, covered, until chilled.
Makes 4 servings
