Ingredients:
1 ½ teaspoons salt
1 teaspoon dried sage
½ teaspoon ground black pepper
4 center cut bone-in pork chops
2 Tablespoons butter
1 cup homemade beef stock
4 cloves garlic, whole
1 small yellow onion, thinly sliced
Directions:
Combine the salt, sage and black pepper in a small bowl and rub on both sides of the chops. Melt the butter in a large skillet over medium-high heat and sauté the chops for 3-5 minutes per side, or until well browned.
Meanwhile, in a separate small saucepan over high-high, combine the stock, garlic cloves, and onions. Bring to a boil.
Pour the broth mixture over the chops, reduce heat to low, cover and simmer chops for 30-45 minutes until cooked through.
Remove chops from the pan and cover. Pour ¼ cup gravy in a small bowl. Add ½ – 1 teaspoon thickening agent (tapioca starch, kudzu, potato starch or arrowroot powder) of choice and stir vigorously until well combined. Add thickened gravy to the remaining sauce and simmer on low until desired thickness.
