Ingredients:
¾ pound fresh green beans, trimmed
1 teaspoon olive oil
3 shallots, peeled and thinly sliced
1 Tablespoon lemon juice
1 Tablespoon fresh parsley, chopped
1 ¼ teaspoon lemon zest
¼ teaspoon garlic, minced
1/8 teaspoon sea salt
1/8 teaspoon black pepper, freshly ground
Directions:
Place green beans in a steamer and steam over simmering water until tender, about 5 minutes. Run steamed green beans under cold running water for 30 seconds to stop cooking and set aside.
Heat oil in a large nonstick skillet. Add shallots and cook, stirring often. Add some water to prevent sticking if necessary, until golden and tender, about 5 minutes.
Meanwhile combine parsley, lemon juice, lemon zest and garlic in a small bowl. Set aside.
Add green beans to skillet and toss over medium heat until heated through. Season with salt and pepper.
Place green beans in a serving bowl and sprinkle with lemon mixture.
Makes 4 servings
