Lemon Greek Veggie Salad

Ingredients:

1/2 large cucumber, chopped

1/2 large red or orange bell pepper, chopped

1 cup fresh tomatoes, chopped, sliced, or wedged

10 medium black olives, chopped

1 Tablespoon dried parsley

2 Tablespoons red onion, finely chopped

2 Tablespoons fresh lemon juice

1 teaspoon olive oil

1 clove garlic, minced

Greek Seasoning:

1/4 teaspoon dried oregano

1/8 teaspoon dried thyme

1/8 teaspoon dried basil

1/8 teaspoon dried marjoram

Directions:

In a serving bowl, combine Greek seasoning, parsley, olives, and garlic. Whisk in the lemon juice and olive oil. Add cucumber, bell pepper, tomato, and onion. Toss to coat ingredients with dressing. Add up to 1 teaspoon more of lemon juice to taste.
