Ingredients:
¼ cup shallots, minced
¼ cup olive oil
¼ cup balsamic vinegar
2 Tablespoons fresh orange juice
½ teaspoon table salt
¼ teaspoon freshly ground black pepper
Directions:
In a blender, combine balsamic vinegar, orange juice, salt and pepper. Blend together on medium speed. Keep the motor running while slowly adding the olive oil. Add the shallots and blend for 15 seconds. Dressing should be slightly chunky from the shallots.
Makes 4 servings
