¼ cup yellow onion

Olive oil

1 teaspoon minced garlic

½ pound ground Turkey

Cumin and Chili powder to taste

¼ cup chopped green chilies

2 Roma tomatoes, diced

½ can black beans (drained and rinsed)

4 bell peppers

1 cup Rice or quinoa – optional

½ cup Almond cheese


Cut tops off peppers and steam until just soft. Put to the side.

Sauté oil, onion, and garlic until golden. Add turkey breast, cumin, and chili powder. Cook entirely.

Add green chilies, tomatoes, beans, and rice (optional)

Take contents of pan and put in peppers, place in casserole dish.

Cover with almond cheese and cook at 350 degrees for 45 min.

Makes 4 servings
