Ingredients:
4 cups mixed greens
½ cucumber, halved lengthwise and sliced
1 tomato, diced
Dressing:
2 Tablespoons olive oil
2 Tablespoons balsamic vinegar
Dash of lemon
½ clove garlic, minced
Salt & Pepper to taste
Directions:
Whisk all dressing ingredients in a small bowl, or shake in a dressing container.
Toss mixed greens, cucumber and tomato with ½ – ¾ of the dressing. Serve with leftover dressing if needed.
Makes 2 servings
