Black Bean & Corn Salad

Ingredients:

½ (14-ounce) can black beans, rinsed and drained

½ cup cooked corn kernels, cut off the cob

¼ red onion, finely chopped

¼ cup chopped fresh cilantro

2 scallions, thinly sliced

½ jalapeno pepper, seeded, deveined, and finely chopped

2 teaspoons fresh lime juice

2 teaspoons olive oil

1 garlic clove, finely chopped

¼ teaspoon salt

Freshly ground pepper, to taste

Directions:

In large mixing bowl, combine all the ingredients; toss to combine. Let stand, covered, until the flavors are blended, at least 1 hour.
