Green Salad with Smoked Paprika Vinaigrette

8 cups mixed greens

½ cucumber, halved lengthwise and sliced

1 tomato, diced

1/4 red onion, thinly sliced


¼ cup red wine vinegar

3 Tablespoons honey

½ Tablespoon homemade mustard or Annie’s brand Dijon mustard

½ Tablespoon lime juice

¾ teaspoons smoked paprika

½ garlic clove, minced

1 Tablespoons onion, finely chopped

1/8 teaspoon oregano

¼ cup olive oil

Salt and pepper to taste


Blend the red wine vinegar, honey, mustard, lime juice, pepper, salt, paprika, garlic, onion, oregano, and sugar together in a blender until thoroughly mixed. Drizzle the olive oil into the mixture while blending on low. Chill at least 1 hour before serving.

Toss mixed greens, cucumber and tomato with ½ – ¾ of the dressing. Serve with leftover dressing if needed.
