Ingredients:
12 eggs, whisked
1 lb. ground turkey
1 ½ teaspoon dried parsley
1 teaspoon dried oregano
1 clove garlic, minced
1 teaspoon dried ground basil
1 teaspoon fennel seed
1 sweet potato, shredded (through the food processor is the easiest!)
½ yellow onion, diced
1 teaspoon salt
1 teaspoon ground black pepper
Directions:
Preheat oven to 375F
Heat some olive oil in a large skillet over medium-high heat. Add the ground turkey, parsley, oregano, garlic, basil and fennel seed and brown until meat is cooked through. Season with Salt and Pepper.
In a large bowl, whisk the eggs. Add the cooked meat, diced onion and shredded sweet potato and stir to combine. Add the salt and black pepper.
Grease an 8 x 8 or 9 x 9 dish and add egg mixture to it.
Cook for 25-30 minutes or until the eggs are no longer runny.
Let sit for at least 10 minutes before eating.
