Cucumber Salad

2 cucumbers, peeled and sliced into matchsticks

1 carrot, peeled and shredded

1 green onion, thinly sliced

½ cup rice vinegar

2-4 Tablespoons Agave nectar or to taste

1/8 – ¼ teaspoon crushed red pepper

Salt to taste


Place vegetables in a bowl. In a small bowl, combine the vinegar, Agave nectar, crushed red pepper and salt to taste. Pour over vegetables and toss to combine. Serve immediately or let marinate as long as time permits.

Serve over warm brown rice.

Makes 4 servings

**This recipe is to taste. If you enjoy vinegar as much as I do, then you will not need very much Agave. Please adjust this dressing according to your taste buds.
